I was craving roasted chicken, so I decided to make a Roasted Rosemary Whole Chicken. The combination of fresh rosemary, garlic, and seasoning made the chicken incredibly aromatic as it roasted in the oven. The smell alone was enough to make anyone hungry!

Ingredients
1 whole chicken
4 tablespoon butter
1 teaspoon salt
1/2 teaspoon ground black pepper
1 1/2 teaspoons dried Rosemary Leaves
1/2 teaspoon dried thyme
1 tablespoon Paprika
1 teaspoon garlic powder
1 stalk of lemon grass
1 medium-sized onion
2 tablespoon fish sauce (Patis)
3 tablespoon soy source
Preparing the Chicken
- Combine melted butter, salt, pepper, rosemary leaves, thyme, paprika and garlic powder.
- generously rub the mixture around the chicken.
- Stuffed the chicken with onion, lemon grass, soy Sause and fish sauce.
- Wrap the chicken using plastic wrapper and refrigerate for few hours up to 3 days.
How to cook the chicken?
- Preheat oven to 350 degrees F (175 degrees C).
- Roast in the preheated oven for 1 1/2 to 2 hours, or until chicken is cooked through and juices run clear. Cooking time will vary a bit depending on the size of your chicken.
